At 40 months, protein breakdown is particularly advanced: the cheese develops the characteristic granular, crumbly structure and visible tyrosine crystals associated with long aging, together with a more concentrated, savoury aromatic profile, with notes of nutmeg, pepper and dried fruit. This is also the stage at which digestibility reaches its highest levels, as a greater share of the protein has already been broken down into simpler, more easily absorbed amino acids.
